200 g h2o
60 g starter

next morning
100 g bread
50 g water
150 g starter
9 g salt

71 hydration
7:00am 10 mins on mixer. looks thiner than 71 %.

9:00am too wet and sticky so 74g of bread and on hook for 2 minutes. into banneton and warm oven.
12:45 oven to 495. tried to turn on to peel. no go. stuck! onto pizza stone. pot cover for 10.
uncover 35 min. Hard crust and gummy crumb.
