380 g bread flour (Grain Craft Power Flour)
250 g warm water 89 degrees (30 sec in microwave)
100 g starter
1 t koshure salt
left on counter 70% hydration
lift and fold then 5 minutes kneading
4:15pm into rectangle banneton
7:45pm into fridge
out of fridge 5:45am
bake 495 at 7:45am
