400 g water warm
100 g starter (not very active)
11 g salt

lift & fold 3 times every 15 mins
5:30 still in mixing bowl into warm oven.
8:00 shape and into benneton and fridge
next day 6:30am out of fridge
7:00 pre heat to 485
7:45 in to oven 20 min remove pot
lower temp to 465 another 20 mins
good raise!
