260 g warm water 89 degrees (30 sec in microwave)
100 g starter
1 t koshure salt
1 tsp caraway seeds
2 tsp onion flake
left on counter 45 min 72% hydration
5 mins in mixer
1:00pm short knead and into rectangle banneton
4:45 into fridge
into 500 oven 8:30am
